At a university in Bavaria, Germany, there is a yeast bank that has preserved live yeast for 150 years. By using the live yeast managed there, we have achieved German craft beer that can be aged for a long time. Especially with Weizen, you can enjoy the yeast's flavor even more by thoroughly mixing the yeast that settles at the bottom of the bottle when drinking.
3. Meticulous Traditional Brewing Method Incorporating Decoction

An important process in brewing delicious beer is "mashing," where enzymes in the malt convert the starch in the malt into sugar. Schmatz beer adopts the "decoction method" of mashing, developed in Germany, brewing by heating the malt in multiple stages. The number of times the mash is stirred and boiled changes the amount of residual sugar, allowing the richness of the beer to be adjusted. After mashing, yeast is added for alcoholic fermentation, completing the beer.
The decoction method is, frankly, a labor-intensive process. Nevertheless, this extra effort is crucial because it brings out the sweetness of the barley exceptionally well!
